What is Umami BBQ Pork with Furikake Rice?
I am so excited to share this dish with you. It is truly one of the most unique dishes I’ve ever eaten. I first tasted this dish at a local BBQ spot near my home called Odd BBQ. Odd BBQ is a mix of American BBQ smoked dishes with a Korean twist. I was so inspired by their Ono Pork Plate which included their BBQ pork that is smoked over, kimchi, and rice topped with Furikake that I knew I had to recreate it at home.
In fact, this dish changed the way I thought about BBQ pork. To be honest, I didn’t love the BBQ pork that I’ve had in the past which was typically shredded and served on top of a bun with coleslaw. Somehow serving this with kimchi and rice turned it into one of my favorite dishes of all time. My pork is not as good as Odd BBQ probably because I don’t have a giant smoker filled with hickory wood in my backyard like they do but I think I come pretty close.
Instructions
The recipe first starts with Kalua Pork that I make in the Instant Pot, then you add your favorite BBQ sauce, Kimchi, a side of Rice topped with a soy glaze and Furikake and what you end up with is a mix of sweet, smoky, salty, tangy, and that indescribable umami flavor.
Umami BBQ Pork Bowl
Ingredients

Favorite Prepared Kim Chi
Favorite Bottle of BBQ Sauce. I like Capital City Mambo Sauce in this dish.
Soy Glaze
- 1/4 cup Mirin
- 1/4 cup Soy Sauce
- 1/4 cup Sugar
Steamed Rice
Instructions
- First make the soy glaze by adding all ingredients to a saucepan. Simmer on medium high heat until the liquid becomes a thin syrupy consistency. About 2-3 minutes. Turn off pan and set aside.
Now the rest of the instructions is basically just assembly.
- Take your steam rice and place onto a bowl or platter. Add a drizzle of the soy glaze and sprinkle with Furikake.On the side, add your shredded prepared Instant Pot Kalua Pork. Drizzle the top of the pork with your favorite BBQ sauce. Serve the dish with a side of prepared Kim Chi. Enjoy!
